Crunchy? Me? My New Favorite Granola Recipe.


An Awesome and Healthy Granola Recipe

I’m loving granola these days and have been making a variation of my friend Bobbi’s recipe. It’s easy and super yummy. I really think it’s the best granola recipe.

I started another batch this morning then decided I didn’t want to turn on the oven and heat up the house on an already hot day (what I wouldn’t do for AC right now!), so set it aside to bake later. Here’s what I put in mine…

  • 4 cups old fashioned rolled oats
  • 1 cup unsweetened shredded coconut
  • 1/2 cup or so pecans, chopped
  • 1/2 cup or so almonds, chopped
  • 1/2 cup or so walnuts, chopped
  • 1/4 cup or so sunflower seeds
  • 1/8 cup or so wheat germ
  • 1/8 cup flax seeds

Whisk together:

  • 1/2 cup water
  • 1/2 cup coconut oil
  • 1/4 cup honey
  • 1 Tbsp vanilla

Next, stir the oil mixture into the oat mixture. Pour the granola into a 9 x 13 inch baking dish. Bake at 325 degrees F, stirring every 20 minutes or so until the mixture is toasted. It takes an hour or more, depending on how toasty you like your granola.

Finally, when the mixture is cool, stir in some dried fruit. I’ve been using:

  • 1/2 cup raisins
  • 1/2 cup dried cranberries

But you could use any dried fruit. I’d like to try it with dried cherries or maybe do a tropical version with mango and papaya. You can also substitute different nuts and seeds as desired.

Eat! I’ve been having this for breakfast almost every day lately. I top mine with kefir or milk and some fresh fruit. Yum!

    Sounds so good! I eat homemade granola and yogurt almost every morning, too. One change I’ve made is to add ground flax seed to the granola after baking. A nutritionist told me that the body doesn’t absorb nutrients from the whole seed, and that heat diminishes the nutrients in ground flax. So I just sprinkle it over the finished batch before storing it. Thanks for your recipe!

    I’m so glad to find an easy recipe for granola – we love to eat granola with yogurt. Sometimes it’s just a topping, and sometimes we make yogurt parfaits! Thanks for sharing this!

    I make a similar version that’s derived from these two recipes:
    I add extra ground ginger because I like the warm flavor it gives when combined with cinnamon and vanilla.
    I have also found that when I make a big batch, it’s best to put aside half it it with NO added dried fruit, because the longer it sits with the fruit in it, the more moisture is lost from the fruit (it transfers to the granola). The result is hard raisins and less crunchy granola.

    Thanks for the recipe. Someone gave me a jar of homemade granola for Christmas and I loved it. I am thinking about making a few to give out this year. I will definitely try your recipe out.

    Good tip. Thanks Amy! I was planning to stock up on an extra big batch before the baby comes. I’ll make sure to store at least half without the dried fruit.
