It all started with a phone call. Sarah called to say that organic strawberries were on sale for $1 a pint at EarthFare.
I asked Harry to pick some up on his way home from work. He brought home 20 pints! We’ve been eating lots fresh. Yum. I LOVE strawberries!
I made some fresh strawberry jam using this recipe (no canning required). It’s very sweet — next time I’d halve the sugar.
Then I made crepes with the jam and the strawberries. I use this recipe for both sweet and savory crepes and love it.
I filled a few freezer bags with strawberries for future smoothies.
Then I went back to the store for another 20 pints and started all over again! More strawberries for the freezer, more jam (I tried a no sugar version of the above which made more of a sweet ‘n’ tangy sauce),
And some strawberry cornmeal “coffee cake” which was actually a muffin recipe baked in a square pan (shown topped with the no-sugar strawberry jam).
Mmm… Strawberries. Last year we picked our own, but the place we went to isn’t doing it this year due to the weather we’ve had this spring. Not so great for strawberries apparently. So this amazing sale at our grocery store was perfect.
