This is the best blueberry muffin recipe we’ve made! It’s easy and delicious, with lemon zest and lots of blueberries. A big hit with kids and adults alike!

We love blueberry muffins! Who doesn’t, really? How can one not love fresh blueberry goodness wrapped up in a muffin?

This is Jean’s recipe, adapted and tweaked from various other blueberry muffin recipes, until her kids said, “Mama, you make the best blueberry muffins!” And we have to agree. This is a great blueberry muffin recipe!

The Best Blueberry Muffin Recipe

Makes 12 regular-sized muffins and 12 kid-pleasing mini muffins

INGREDIENTS

  • 2 cups all-purpose flour (or half all-purpose and half white wheat flour)
  • 1/3 cup sugar, plus more for sprinkling
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) butter, melted then cooled somewhat
  • 2 large eggs
  • 1 cup plain yogurt
  • Zest from one lemon
  • 1 teaspoon vanilla
  • 1 1/2 cups blueberries, frozen or fresh
  • Muffin tin (regular size and mini; the mini muffin tin in these photos came as part of this Little Bakers Cook Set)
  • Muffin tin liners (we love these silicone ones)

INSTRUCTIONS

  1. Prep your materials

    Preheat oven to 400 degrees Fahrenheit and line the muffin tins with silicone muffin cup liners, paper liners, or just grease the tin.

  2. Mix your dry ingredients

    Whisk the dry ingredients together in a large bowl.

  3. Mix your wet ingredients

    Whisk the melted butter and eggs together in a medium bowl. Add the yogurt, zest, and vanilla, and whisk some more.

    Note: you can use vanilla yogurt and then skip the additional vanilla extract.

  4. Combine

    Combine the wet and dry ingredients, stirring just until combined. Fold in blueberries.

    (Or you can mix the blueberries into the dry ingredients first, then gently stir in the wet ingredients. We’ve done it both ways.)

    Then divide the batter between muffin tin sections. We always divide the batter between one regular-sized muffin tin and one mini muffin tin.

    If you like, you can sprinkle the tops of the muffins with sugar before baking.

  5. Bake!

    Bake for 20 minutes. Test with toothpick; if it comes out clean, the muffins are done.

    Let cool slightly on a wire rack if you have the patience.
