Patriotic Fruit Popsicles

We made these red, white, and blue popsicles for Independence Day weekend, inspired by the patriotic popsicles at The Magic Onions (thanks for the link, Dawn!). Okay, so I guess ours are more pink, white, and purple — even better from Maia’s standpoint. We pureed our fruit with a bit of vanilla ice cream which tinted the colors. And of course they are delicious. How could they not be?

I think we have a new 4th of July tradition on our hands. What are your food traditions for the 4th?

    I’d like to say it is a tradition but in reality I’ve only made it once — Red, White and Blue Potato Salad. (Beets = red, egg = white, blue potatoes = blue, plus some onions, celery, mayo, whatever else you want.) It does end up pink when the beets are stirred in, which is similarly fine around our house! :)
